Triple berry shortcake

Berry Sauce

1 cup blackberries
1 cup strawberries
1 cup blueberries
(now you can use any fruit that you want to in this, all one berry or multiple fruits)
1 cup sugar
1/2 cup water
1 tablespoon flour, cornstarch can be used
2 tablespoons butter

Cut the strawberries in half.
In a large bowl coat the berries in the sugar and let rest while making the biscuit dough. Don't touch them until the biscuits are in the oven or a little longer if you can, sometimes time wont allow but give it at least 20-45 minutes of sitting in the sugar. The sugar will help release the juices in the berries. You can also use frozen berries in this.
After you have let the berries marinate in the sugar give them a nice toss and make sure there is some juice releasing, if not let it rest a little longer until you see some juice. It doesn't have to be a lot. Put the berries in a medium sized pot over medium heat and add the water and butter, trust me on the butter! Slowly cook until a watery sauce is made, stir constantly. Take a small amount of the juices into a bowl, or your measuring cup would work, and mix the flour in until its not too clumpy. Add to the berries. reduce to low heat, still stirring. Now would be the perfect time to make homemade whipping cream, while the berry sauce is thickening.


Biscuits:

2 cups self-rising flour
3 tablespoons of sugar
1 1/2 cups heavy whipping cream
coarse sugar, normal sugar will work, I like the In the raw from Maui sugar. This is just for sprinkling on the top
3 tablespoons melted butter

Mix in a bowl until a ball is made, can use a food processor too if you want. Dust work space with flour and fold the dough a few times until its not so sticky. Roll out to about 1/2 inch thickness and cut into biscuits. I don't have a biscuit cutter so I use a mason jar dusted with flour.
Grease or butter, of course I use butter, a baking pan or sheet, whatever you have to use.
Place the biscuits about an inch apart. Take a basting brush and brush the tops of the biscuits and sprinkle on the coarse sugar. Bake in a preheated oven at 500* until golden brown, about 10 minutes. Makes 8 very large biscuits or 12 "normal" biscuits.

Once you have finished the berry sauce, whipped cream and biscuits now is the time to build them! Cut the biscuits in half and butter at least one side. Put some berry sauce inside topped with a heaping dollop of whipped cream and the top of the biscuit, then add more of the sauce on top. Perfect summer time treat!
