Eggs in the middle of a blanket: from hard-up post

Scratch buttermilk pancakes:
1 1/2 cups self-rising flour
1 teaspoon of vanilla
1 egg
1 teaspoon salt
1 tablespoon sugar
1 cup buttermilk, the recipe can use plain milk if no buttermilk/sour milk is available
1/4 cup milk
4 tablespoons of butter

*For the middle of the blanket you need an egg for each serving you are going to serve. This recipe yields about 8, but if you don't need to serve that many people you can make plain pancakes for lunch sandwiches with the left over!



In a large bowl sift the dry ingredients. If you don't have a sifter, use a whisk to break up the clumps. Make a well in the in the middle of the flour mix. Pour the remaining ingredients into the well and whisk until the egg is beaten, slowly going up the side incorporating the flour. Mix until smooth.

Heat a griddle, cast iron (my favorite) or a frying pan over medium heat. Use 1 tablespoon of butter, cooking spray or small amount of oil in the pan. Take a 1/4 cup of the batter pour into the pan in the shape of a doughnut. Hurry and crack the egg and put into the center of the doughnut, make sure there's enough room for the egg and that it touches the pancake around its edges. You can salt and pepper the egg if you want. Brown the pancake, if the egg isn't cooked to your liking lower the heat and let the egg finish. I like the eggs over easy, you can dip the pancake into the yoke and get a sweet and salty breakfast. Yummy!
