Moz inside out burgers





ball or log of fresh mozzarella cheese
2 lbs lean beef, or turkey, pork works too
1 tablespoon sea salt
1 tablespoon seasoning salt
1 tablespoon fresh ground pepper
splash of soy sauce
splash of teriyaki sauce
splash of worcestershire  sauce
very very cold butter in tiny slivers equivalent of about 2 tablespoons
1 tablespoon of water

Put the lean ground meat in a bowl and put all of the dry seasonings, water and butter in with it. Mash and mix, you can use a spoon or fork but i prefer to use my hands that way its thoroughly mixed. Cut the mozzarella ( moz) into cubes, the amount of burgers you want to make. This can make about 6-8 large burgers or 10-12 very small. The bigger the more moist and gooey cheese you get. Take a cube of moz. and make a patty out of it, and grab a handful of the meat and surround the cheese. About an inch total thickness maybe a little more. Continue until all are made. Heat a large skillet over medium heat. Place the burgers in, no oil is needed. Sprinkle a little more salt and seasoning salt on the tops. You only want to turn your burgers one time, so watch them and when you see a light brown coming up the sides of the burger and it hit about halfway flip them. (about 5-8 min depending on heat) Continue cooking and about 3 min in splash in the sauces over the burgers. Finish cooking the burgers the last few minutes, the sauces will thicken in the pan and almost look syrupy about the time that the burgers are done. Take them out and eat hot, the cheese will look just like in the pizza commercials where the cheese strings from your mouth the the burger when you take a bite! Serve with BBQ sauce, ketchup, mustard, tomato, onion, anything and on your favorite bun. I like the thin round breads for sandwiches.
