Orange Peppered Steak

2 teaspoons of salt
1 pkg of frozen Japanese vegetables

fixing

The post of the 2 in 1 chicken dinner I just added some alterations to the recipe, if you have looked at it recently please look at it again.
Summary is to add more chicken if serving more than 2-3 people and to double the rice part of the recipe. And changed the amount of flour for the "thickening gravy" portion.
Also to try adding barley, rice to the chicken noodle soup.

2 in 1 Quick Fix Chicken DinnerS

10 chicken tenders ( I cheat and buy the bag full of them, there's no rib meat in it, and can be used for a lot of meals and cheaper :))
6 carrots, chopped to bite size
1/2 head of small cabbage, bite size chopped
1 red onion, chopped to bite size
3 cloves of garlic
2 pinches of salt
1 large pinch of pepper
3 celery sticks if you have it
3/4 cup brown rice

Lasagna Casserole


5 Tomatoes, diced small
1/2 teaspoon of oregano
1/2 teaspoon of basil
1/2 teaspoon of salt
1/2 teaspoon of pepper
1 15oz can of tomato sauce
Chop the tomatoes very small add all other ingredient to it in a pot and simmer over low heat, and leave it be.

New creation for tomorrow

Tomorrow I will be making a lasagna casserole. I have a lot of left over lasagna ingredients that need to be used and some pasta, sounded different and delicious. I will take some pictures and post tomorrow! That is if it tastes decent enough to post! I am also "fixing" my recipe notes. It looks like a bunch of random chicken scratch, once organized and legible they will be posted as well! The measuring is what is holding me back. I am an "eyeballer" which I understand some can't do that yet, but it is possible so try it! And never be afraid to just throw some random ingredients in a pan and see what happens!!

Zesty Chicken Pasta





1 Pkg chicken tenders
1 bottle favorite zesty italian or greek dressing, try others too
1/2 cup Pecorino Romano cheese (grated fine)
1/2 cup Parmesan cheese (grated fine)
1 can basil and oregano diced tomatoes ( I prefer Del Monte)

Homemade Cheese Sauce

3 tablespoons of butter
2 teaspoons of olive oil
2 tablespoons of flour
2 cups of milk
3 cups- 1 lb of sharp cheddar cheese, you can use a number of cheeses for this sauce depending on what you are making, try them out!
salt and pepper to taste

Melt butter and olive oil together, whisk in the flour and make a roux. Slowly add in the cheese, but not all of it yet. You want a lower heat while doing this so you don't burn the flour. Start alternating between milk and cheese until you have used all of both, increase the heat to medium and melt the cheese thoroughly. Taste and add more cheese if you want and salt and pepper.  Now there are many variations to this as I said above you can use any cheese that you want to use, but you can also add cream cheese for a creamier taste and a little bit of sour cream. I love to use this cheese with some jalepeno juice and dip fresh homemade pretzels in it. You can also add green chiles and chipolte peppers or just the sauce, but add the chipolte in, in small increments so that you don't burn off your tongue! Adding some tapatio is really yummy too, especially for tacos.

Thing with Butter

Ok, I am sure many of you have noticed that when I use butter I use olive oil too. The combination of the flavor is great and they help keep one another from burning as easily. If you have found that you are using margarine (YUCK) and olive oil and its a little oily tasting, then best thing I can say is to use BUTTER! But if you are stuck on margarine omit the olive oil, because margarine is more oily than the butter. But I cannot say enough about the better flavor when using butter, although SmartBalance isn't too bad.

"Alfredo" Sauce with Chicken and Roasted Vegetables

This was just a randomly compiled recipe from what was left in the fridge. As how most of my recipes are, but hey if it has a good end result, might as well share it!

Chop 4 large red potatoes, 1 bell pepper, 3 large yukon gold potatoes, 1 granny smith apple and 1/2 a cabbage chopped finely. Toss with some extra virgin olive oil, salt and pepper. Bake at 350* for 40 min or until the potatoes are cooked through.

4 Tablespoons butter melt in a small saucepan and add 3 tablespoons of flour and whisk it just like a roux. Reduce heat to medium low and add 1/4 cup crumbled feta, 1/4 cup pecorino romano cheese, and 3 tablespoons of parmesan cheese. Slowly add milk in. About 1 1/2 cup milk total. Just keep adding until the sauce is thick and creamy but not as thick as a gravy. Add 1 teaspoon salt and 1 teaspoon of pepper. Slowly add in 1/2 cup sour cream.

10 Cheese Beef Lasagna

3 lbs lean ground beef
1/2 red onion diced small
4 cloves garlic
2 eggs
Handful of Feta
1 cup ricotta
1 lb mexican cheese mix
1 cup sour cream, this was on accident, I meant to but cottage cheese! But it came out pretty delicious!

Banana French Bread Pudding

I came up with this recipe because we had some left over french bread from 10 Cheese Beef Lasagna we had the night before and some very over ripe bananas and just went with what I had in the fridge...This is what I ended up with:
1-1/2 loaves of french bread, depends on how large, just go with what you have
4 eggs
1 cup sugar, I like the taste and texture of organic sugar, almost like brown sugar but not, you can also use brown sugar in this recipe or do half brown sugar, half white sugar
1 tsp nutmeg
1 tablespoon vanilla

Kid Friendly Banana bars

3 Bananas, mashed
1 cup rolled oats, I prefer the old fashioned ones, you can also add flax seed, sunflower seeds etc...
1 cup raisins
1 cup dried fruit mix, or trail mix you favorites
1 tablespoon of vanilla
*If you want some extra sweetness add agave nectar blends in really well
*You can also use just raisins or any favorite dried fruit

Combine all ingredients, add more oats if its still really "wet". You want it moist and pliable not sticky. Scoop out into a large buttered baking dish, smash it down. Bake at 350* until golden brown. When its done let it cool off and cut into bars. Ours lasted in the refrigerator about 7 days, you could also freeze it. My kids looooved this and its a wonderful treat that's healthy.
You can also add honey, cinnamon, nutmeg, cloves and any other number of things that you enjoy. Add it and try it, may come up with your own recipe.

Accidental Granola

While making some oatmeal raisin cookies, I got distracted by my daughter mixing in the oats and raisins, yep my 3 year old cooks too! I got so distracted I forgot to add the flour to the cookies and had put them in a mini muffin pan to make mini cookies that would be perfectly round for the kids. Halfway through the baking process I realized that I had forgotten the flour when they looked funny and bubbly. I let it continue to cook until it was a little more than golden brown and scooped it up out onto a flat sheet and let it dry out as much as possible.

I had about 1 cup butter, 3/4 cup sugar, 2 eggs, tablespoon vanilla beat together well until creamy. Add about 2 1/2 cups oats ( I like to use the old fashioned ones not the quick oats) and one package of raisins. Add 2 teaspoons clove, 1 teaspoon cinnamon. Mix really well and cook a casserole dish, it will bubble up and "pop" and slowly sink around the oats and then get dryer and start to turn brown. Let it dry and eat up!
