Busy busy!

Everything around here has been busy. Between school, life, deployment coming at some point and Itworks, my business I started in April, is why there is a slow in my production of blog posts! I am so sorry to all of you for that.
I do plan for thanks giving to have pumpkin pie, pumpkin roll, sweet potato roll, stuffing, gravy,mashed potatoes, tropical cranberry sauce and yeast rolls!
Oh did I forget to mention my Hawaiian glazed spiral cut ham? I know I know y'all are probably wondering WHERE'S THE TURKEY?!? Well I let my husband pick this year what he wanted. Because we aren't having the usual big crowd for thanksgiving its just Us. So ham it is!! What's are you having for your thanksgiving day meal?

Spinach scramble

I know sounds gross right? It's not!! It's easy yummy and packed full of yummy nutrients. If you are dieting just use 1 full egg and about 6 egg whites. One yolk will boost your protein.

7 eggs
Small bag of frozen spinach
Butter, to taste
Pinch of salt
1 tsp pepper

Beat the eggs salt and pepper together. Empty the frozen spinach into a large pan. When it's almost fully defrosted add the eggs. And just cook the rest of the way through. My kids love this!
You can add tomatoes, avocado, onion or garlic more salt whatever and it's delicious. Also really yummy if you substitute the salt and pepper for half a ranch packet mmm.

I did make some biscuit wrapped turkey dogs! Yummy. Either use homemade biscuit batter or cheap store bought. You can put a slice of cheese in with the dog or pepperoni or salami, sauerkraut or whatever you like. And since my oven was being cleaned I used the frying pan and grape seed oil and cooked over medium heat until "puffy" an lighty browned was soo good!

How is everyone?

I have been really busy with my new at home business. I am very sorry I haven't been on in a while[(*t*)] how is everyone? Today was a very simple little thing. I didn't have time to cook much and after seeing "I like to bake and cook"'s post with the pepperoni rolls I decided to go buy some turkey dogs ( no nitrates or added nitrates with oscar myer) and wrap them in biscuit dough. Very typical but I cooked them over medium low with grape sees oil! Yummy!! And steamed veggies. Very quick and tasty!

MIA

Sorry about being so gone lately I am working on a few things and trying to gather and sort recipes as to what's on here what's on Facebook and making sure both have everything on it. Along with starting a new blog and a new business venture.
I will share the new blog once I have completed it. :)

Buttermilk pie with blackberry glaze

Buttermilk Pie

1/2 cup butter, salted, softened
2 cups white sugar
3 tablespoons self-rising flour
3 eggs
1 cup buttermilk
3 teaspoon vanilla extract
1 (9 inch) deep dish pie crust
( or crush up vanilla wafers, about 2 cups of the cookies, melt 4 tablespoons of butter. Put the crumbs in pie dish and pour butter over, toss around to coat. Press around bottom of pan, I use a wad of plastic wrap so it doesn't stick to me. It's ready to use)

Cream the butter an sugar together. Add the vanilla and flour. Mix well again and beat in eggs one at a time. Add buttermilk ( make sure to shake buttmilk before pouring so you get all flavor and not the clearish stuff)
Pour into pie crust bake at 400 for 10 min. Reduce heat to 325 and continue baking for 50 min. If the crust begins to burn put foil over it.
You can replace sugar with agave if wanted. This tastes wonderful with almond extract instead of vanilla as well. Especially when topped with strawberry almond glaze. Making my mouth water right now!

Blackberry Glaze to coat

1 small bag of frozen blackberries
3/4 cups of sugar
2 tablespoons of cornstarch
2 tablespoons of lemon juice (try not to skip this, flavor difference is pretty big if you don't add. Really makes the berries taste fresh and not frozen)

While you are cooking the pie, in a large bowl combine the sugar and berries. Let sit for 10 min. In a saucepan pour the sugar and berries into it, over medium heat get the berries melted and continue to stir so it doesn't burn. Mix in the cornstarch and lemon juice. Raise the heat a little and stir frequently, continue to cook unil it's bubbling but not boiling and the sauce looks more like a gelatin than the purple color, it will be more of a clear dark purple. Once it really starts to stick remove from heat. I time this to where there is only 5 min left of cooking time for the pie, and I scoop out the glaze and put on the pie and continue to cook for last 5 min.

Remove the pie from heat and let completely cool. I DO NOT reccomend eating hot, it's a custard it tastes much better cold, like pumpkin pie is better cold. This is delicious with my homemade whipped cream, under all recipes on my ReelScrumptious blog.

Tired of the 'ol chips and dip and want something a little on the sweeter side? Try this!

Salty&Sweet!! PMS Cookie and Pretzel Dip!!

1-8oz package of cream cheese
1 cup heavy whipping cream
2 teaspoons of vanilla
1/4 cup powdered sugar
2 teaspoons of cinnamon
Any chocolate chips that you like or any other topping
Something to dip with! I chose vanilla wafers for the extra sweet and pretzels for the wonderful salty sweet!!!

Blend the cream cheese until creamy add the vanilla, powdered sugar and cinnamon. Beat again, then add the heavy whipping cream and beat until fluffy. Sprinkle on the toppings!

Virtual cooking party

New around My Blog

This was actually picked out by my daughter as I was trying to figure out what I should do to my blog to make it different. She chose this, her first choice was a very vibrant purple, but Blogger would only show this template in a dark purple, she was not a fan so she chose pink. She loves flowers and the outdoors so she picked the flowers. And here we have the end result of the blogs overall look. Very spring like.

To navigate around, I know it looks rather Oh My Gosh right now, but its simpler than it looks. If you scroll over to the right of the page a little side bar pops out and thats where you can become a follower, subscribe or view my facebook badge, if you just click the post it will open up and allow you to click the What Happens Next? button or to scroll through other posts. Hawaiian Grilled Chicken

1 cup Hawaiian Soy Sauce (Aloha brand)
(If you dont have it do half teriyaki and half soy sauce)
3 of the small cans of pineapple juice
2 tablespoons of liquid smoke
1/2 cup of ketchup

Hot Milk Sponge Cake



1 cup self-rising flour
2 eggs
1 cup white sugar
1/2 cup milk
juice of 2 tangerines
zest of the tangerines
2 tablespoons butter

In a large mixing bowl, beat eggs until frothy, 3-4 minutes. Slowly add sugar, beat until light and fluffly. Add in the self-rising flour, very slowly.

Banana Nut White Chocolate Chip Bread

FOR DUSTING PANS

1/4 cup Brown Sugar
4 teaspoons cinnamon
6 tablespoons self-rising flour

Bread Batter

3/4 cup butter
2 cups brown sugar
1 cup white sugar
3 eggs
6 very ripe bananas, mashed
1 (16 ounce) container sour cream
2 teaspoons vanilla extract
1 tablespoon ground cinnamon
4 1/2 cups self-rising flour
1/2 cup chopped macadamia nuts
1/4 cup chopped pecans

Dreary Day French Onion Soup Alterations + Au jus and Roast Beef and Provolone Cheese on French Bread and Homemade Bread Croutons from Italian Bread.


Revised the French onion soup it was a recipe I made many years ago when first venturing out onto my own things and it was good I just needed to spruce it up a little bit! And here it is! Read all the way through to get the full recipes!

Homemade Bread Croutons

1 small loaf Italian Bread
3 teaspoons all-purpose seasoning
2 tablespoons of butter
1/8 cup of olive oil

Cut the Italian Bread into 1 inch squares and put into a large mixing bowl. Melt the olive oil and butter together. Pour evenly over the bread and sprinkle 1 teaspoon at a time of the all-purpose seasoning, tossing the bread after each teaspoon to get an even coat. Spread out in a large roasting pan or baking dish and toast it for 7 minutes at 400* Remove from heat and set aside to use.

Simple steak dinner

Valentines Dinner

Was all about the simply delicious. Used Filet Mignion, which I found at Kroger for 3.99 each the Organic Baby Carrots for 1.34 and the Leafy Green Organic Lettuce for 2.49, averaged us about 7 bucks a meal after taxes, with lettuce left over for lunch.

This was very simple

2 Filet Mignion wrapped in bacon
Olive oil, to drissle
salt and pepper to taste (one is more pepper crusted for my husbands liking)
baby carrots, as many as you want, with stems cut
1 bunch of leafy greens

Place in a baking dish and drissle olive oil all over the carrots and steak. Next sprinkle with salt and pepper. Roast at 400 for 20 min, then broil for 10-15. Serve with the lettuce and your favorite dressing.

Yogurt Parfait

Yogurt "Parfait"

1 pkg of Nature Valley Granola bar, smashed
1 banana
1 apple
1 orange
1 Tablespoon of Blackberry Marion Berry Preserves
1/2 cup yogurt
* You can add any fruits that you want to this, add more preserves in more layers as well

Cut up the fruits into smaller than bite size. Layer small bits at a time. In the photo there aren't a lot of layers but thats just because my husband wasn't that hungry. The 1 tablespoon of preserves is for one layer if you want more than that add some more. Enjoy!~

Peanut Butter Cookies (flourless)

1 cup peanut butter
1 egg
1 cup sugar

Combine above ingredients.Spoon out with a small ice cream scooper and place on a cookie sheet 1 inch apart. Bake @ 350 for 8-11 minutes or until the edges look a little darker brown, then I like to press the middle with a fork and bake another 2-3 minutes. These are very flaky and very buttery. DO NOT leave them on the cookie sheet for more than 1-2 minutes, or they will stick and be a pain, but they will also be a pain if you don't let them rest at least a minute. ENJOY FOODIES!

PMS "Cookie" 4 Peanut Butter Cups

6 oz package of semi sweet chocolate chips
4 Nestles milk chocolate bars
1 1/4 cups Peanut Butter

Put chocolate chips, bars and 1/4 cup of the peanut butter in top of double boiler over HOT, not boiling water, stirring until smooth. Use small muffin liners, spoon HALF of the chocolate mixture equally into the liners. Melt the rest of the peanut butter over hot water and spoon equally over the chocolate layer, pour the rest of the chocolate evenly between the cups. Freeze or stick in the fridge until they set up!

Wannabe a Kit Kat

Ritz crackers
1 1/2 cups graham crackers crushed
3/4 cup brown sugar
1 cup white sugar
3/4 cup butter
1/3 cup milk
1 cup caramel chips
3/4 cup peanut butter
1 cup semi sweet chocolate chips

Combine milk, sugars, butter and graham crackers in a medium saucepan and bring to a boil. Boil for about 5 minutes. Layer a 9x13 dish with the ritz crackers. Pour half the mix from the saucepan over the crackers. Do another layer of ritz crackers and top with the remainder of the mix. Add another row of crackers. Melt the caramel and chocolate chips and peanut butter, once melted pour over the top. Cool, cut and push the PMS monster abay.

Dreary Day French Onion Soup

Alright I think I am up to posting a new recipe, no pic though, sorry its a recipe from "the box". Its so dreary soup sounds good to me, and I may make this tonight with some alterations, husbands not huge on onions, but I have some tricks :) Sorry I haven't been posting lately, I have had a lot going on and then dental work to take care of!

Dreary Day French Onion Soup

(need oven safe serving bowls for this)

2 tablespoons of butter
4 cups sliced onion (I prefer red, but its your choice)
3 cups beef broth/stock
1 1/2 cups water
1 tablespoon of cooking sherry (I have used chardonnay instead)
1 tablespoon of worcestershire sauce
1/2 teaspoon pepper
pinch of dried thyme
1 teaspoon of salt
1 cup soft croutons
1/2 cup shredded mozzarella cheese

Melt butter in a large pot, once melted add the onions and cook until translucent, add all of the rest of the ingredients except for the croutons and cheese. Bring to a boil, then reduce heat and simmer until a little thicker, about 5 minutes. Divide evenly between serving bowls top with cheese and croutons, Broil until the cheese is melted and lightly brown. Sounds sooo yummy today!! How I can cheat with the onions is when I get done sautéing them I take about 90% of them and put them in a brand new nylon, tie a knot in it and then add all the other ingredients and continue with the recipe but when you put into bowls take out the nylon filled with onion. That way the flavor is still there and the onions are not.

PMS COOKIE #3 Nutella, Chocolate, 2 types of chocolate chip and macadamia nut cookies!

3 sticks of butter
1 1/2 cup sugar
2 eggs
2 3/4 cups self-rising flour
1 tablespoon of vanilla
1 pkg ghirardelli chocolate chips 60% Cocoa (I chose these because the chips are larger)
1 pkg ghirardelli white chocolate chips
5 tablespoons of Nutella
1/4- 1/2 cup macadamia nuts

Cream the butter and sugar, add the eggs and mix until thick and smooth. Next mix in the vanilla and Nutella. Slowly add the sugar, once combined add the chocolate chips and macadamia nuts.
Bake at 350* for 10 minutes or until lightly browned.

Super buttery and flaky. After they have cooled microwaving them before eating makes it sooo delicious and less crunchy.

Valerie's Frosty

Love this better than the little red heads!

1 cup milk
1/2 cup Nestle's Quik or Ovaltine(less sugar than Nestle)
3 Cups frozen vanilla yogurt

In a blender blend the milk and Quik/Ovaltine for 10 secs on high speed and slowly "pulse" in the frozen yogurt until barely mixed.
Great side to the PMS Cookies!!

Shakes and Bakes

Better than the original!

4 cups of flour
2 teaspoon Cayenne Pepper
1 cup bran flakes cereal (crushed)
2 tablespoons Parsley Flakes
2 tablespoons Garlic Powder
1 tablespoon of Onion Powder
2 teaspoons of Chili Powder
2 tablespoons Taco Seasoning
1 teaspoon ground Pepper
1 teaspoon Curry Powder (sometimes I use Cumin instead)
1 teaspoon of Basil
1 teaspoon of Oregano

Mix all the ingredients together in a large ziploc bag and dredge Chicken or Pork in the mix. Melt 1/2 stick of butter in a shallow 9x12 baking pan.
Bake 400 uncovered for 20 minutes reduce heat to 350 and bake for another 30-35 minutes.

I love it with some brown rice and gravy!

Bagel Pizza

For Pizza day:


1 pkg of plain bagels (or homemade 6)
1 1/2 cups pizza sauce
1/4 lb of pepperoni
1/4 lb of salami
1 cup of mozzarella
1/2 cup of black olives
1 tomato diced up
1 can of pineapple
1/2 cup of bacon

Spread sauce over the bagels, thinly layer a little cheese and pile up the toppings and top with more of the cheese. Bake at 350* until the cheese is nicely melted. Add any toppings that you may want to add.

SUUUUPER DIP!

My version of refried beans 

2 cans of bush's chili beans
3 cloves of garlic, crushed and minced
1/2 stick of butter
1 small can of chicken stock

Twice baked BBQ chicken potato skins, perfect for Super Bowl

6 potatoes
1/2 cup of sour cream
1 cup of mexican blend cheese (with the cream cheese is the best!)
1/4 cup of your favorite BBQ sauce
3 tablespoons of butter
1 teaspoon of salt
1 teaspoon of pepper
Additional cheese, to top

Bake the potatoes at 350* for 1 hr or until soft. Once cooled cut in half and very carefully scoop out the insides with out ruining the skins, leave a nice "cup" to hold the ingredients later. Put the insides into a medium bowl and add the above ingredients, except the additional cheese.

Top the chicken on top of the potato skins, top with additional cheese. Bake at 350* until the cheese is fully melted. Dip in ranch or more bbq sauce.

Apples & Cream Cheese Snack

Heidi Schirer's Apples & Cream Cheese Snack

1)Cut 3 green apples to slices.
2)Put an 8 oz of cream cheese in the center of plate pushing the slices into the square to spread the cream cheese. ( almost looks like a flower when u push it out)
3)Drizzle carmel apple dip on the apple slices.
4)Sprinkle chopped pecan pieces on top.
Enjoy!

I made it her way, which was soo yummy. Then, I was in the cupboard and found some things that I wanted to try and add to it. I added a little bit of agave to my taste to the cream cheese. I mixed some macadamia nut chunks into some Nutella, and sprinkled some cinnamon around. Like I said her way is amazing and much faster, and its a very versatile recipe.

Jalepeno Popper Wantons

6 jalepenos cut in half and seeded
6-8 tablespoons of cream cheese, depending on the size of the jalepenos
wanton wrappers, large square ones
2 tablespoons of melted butter


Fill the jalepenos with about a tablespoon of the cream cheese, wrap the wanton around it and hold in your hand to warm it so that the edges stick. Baste the outside with butter and bake at 350* until they are a golden brown. Dip in ranch or blue cheese dressing. WASH HANDS! DON'T TOUCH YOUR FACE, IT WILL BURN! I touched my lips and burnt them a little bit. Wash all untencils and cutting board so that the jalepeno juices don't soak in.

Mozzarella Wanton Sticks

2 tablespoons melted butter
8 mozzarella sticks cut in half
Italian cheese blend
wanton wrappers (Large square ones)

Cut the wanton wrappers in half and wrap around the mozzarella sticks, individually. Hold in your hand to warm and it will keep it from unraveling. Baste the outside with butter and sprinkle with the Italian cheese blend.
Bake at 350* for 25 min or until the edges and cheese brown.
Dip in marinara sauce or ranch or a combination of the both!

1 package of wanton wrappers, I used the small square ones
4 granny smith apples, peeled, cored and chopped small
1/8 cup brown sugar
juice of 1/2 lemon
1/8 cup of white sugar
2 tablespoons of flour

Make the dough for whichever sounds good, or both! And a big bar of the Hersheys Cookies and Cream chocolate bar. Break the bar into the squares. Use 1/2-1 square to shape the cookie dough around it. Bake at 350* until golden brown on the outside.

Awesome Sandwich: BAAT (heheehe..BAAT)

Recipe to think on for now:

Mix 1 avocado with 1/2 cup mayo
4 slices of cooked bacon
5 pieces of arugala
2-4 slices of bacon
2 pieces of toasted bread

I prefer to toast the bread in the oven, then one side is still soft. Smash the avocado and mix in the mayo, spread over the bread and layer up the bacon, tomato and arugala.
For those that don't like avocado, you have to try this at least one time. I have had many that tried it and I didn't tell them avocado was in it and they loved it. They were shocked when I told them

Fans Recipe French Onion Meatloaf

I really enjoyed this!

I didn't take a picture, too much with kids going on, but I will be making it again on payday, and I will make sure to take one then! In case you missed her recipe here it is:

french oion meatloaf
1lb. hamburger
2 slices of bread cumble up
1 oion chopped
salt,pepper,oion powder and garlic powder to taste
1 can of campbell french oion soup
mix all ingrednts together add half can of
soup to the meat
add the rest of the soup to the top of the meatloaf
bake at 350 for 1 hour

The point of the photography blog is to show what I am learning and that I am trying to become a photographer. I focus mainly on nature, food and my children. Although, I have been doing some personal photos for friends, it really helps me with learning new techniques. And I would like to learn all aspects of photography, not just food photography. Updated

Bean and Bacon, Orzo Chicken Casserole


Came up with this while just glancing around the cupboards trying to find what new thing I was going to make today. The sour cream or cream cheese absolutely makes this. My kids mowed this down like there was no tomorrow!

2 small cans of bean and bacon soup
1 box of orzo , they come in small boxes for just over a dollar
8 chicken tenders
5 cups of water
2 tsp salt-for boiling chicken
2 tsp of pepper-for boiling chicken
4 tablespoons of butter

Peanut Butter & Jelly and Maple Bacon Cupcakes!!!!

Maple and Bacon Cupcakes

1 stick of butter, at room temperature 
1/2 cup brown sugar
3 eggs
1/4 cup milk


4 tablespoons maple syrup
1 cup self-rising flour
1 pkg turkey bacon

Beat butter and brown sugar together, until creamy. Add the maple and eggs slowly. Add in the milk and flour. Brown up the bacon and cut about 6 slices into chunks and fold into the batter. Bake at 350* until golden brown.

Sugar Tit Recipe

Now there are many different things that people think that this is. For me my mom called sugar tits the left over bits of pie crust baked with sugar, sugar tits.
We loved them! This is a variation of my own way. You can do it the traditional way and wait until you bake a pie and use the left over bits of crust or use the recipe I have concocted :)

Chicken Queso

I think that this weekend I am going to work on making a cream cheese based chicken queso dip! Sounds sooo yummy! And I also want to do something with bacon and cupcakes! Sounds pretty good. I will try to be a little healthy on the bacon and use turkey bacon.

Chocolate Chip Swirl Cookie recipe

I came up with this for a friends birthday. Need to make some more!

3 sticks of butter
1 1/2 cup sugar
2 eggs
2 3/4 cups self-rising flour
1 tablespoon of vanilla
2 pkgs ghirardelli chocolate chips 60% Cocoa (I chose these because the chips are larger)
1 pkg of melted unsweetened chocolate (Nestle Pre-Melted)

Cream the butter and sugar, add the eggs and mix until thick and smooth. Next mix in the vanilla. Slowly add the sugar, once combined add the chocolate chips. Slowly add the melted chocolate and lightly fold it so it doesn't fully mix and looks "swirly"
Bake at 350* for 10 minutes or until lightly browned.

Super buttery and flaky. After they have cooled microwaving them before eating makes it sooo delicious and less crunchy.

Quick Pulled BBQ Chicken

7-8 Chicken tenders or 4-5 Chicken breasts
5 Tablespoons soy sauce
6 Tablespoons teriyaki sauce




1/2 cup favorite BBQ sauce (I use Sweet Baby Rays or Famous Daves)
Foil

Make a large foil "pocket". Place the chicken inside and pour the rest of the ingredients evenly on top. Take more foil and enclose it.

The Teriyaki Steak sandwiches

The Teriyaki Steak sandwiches were amazing! I don't have a picture they were devoured too quickly but here is the recipe. I didn't find my pineapple juice so I substituted with orange juice, worked just fine.

1/2 cup teriyaki sauce (I use kikoman, shoyu is good)
1/4 cup soy sauce
1 tablespoon of worcestshire sauce
3/4 cup orange juice (pineapple juice is best, apple is good with chicken)
1/4 cup of agave (better for you than sugar but if you don't have it use brown sugar)
3 cloves of garlic, smashed and finely chopped
2 tablespoons of fresh ginger root, finely diced (cut off a piece, cut off the "bark" and use the yellowish white insides)

Gluten Free Chicken and Dumplings or Not

This has got to be my new favorite chicken dinner. It has just the right amount of salty yumminess and the sauce is thick. Perfect on a cold night, with a nice cup of hot apple cider.

Step 1
5 Carrots peeled, cut to bite size
3 Celery Sticks cut to bite size
1/2 Red Onion chopped to bite size
3 cloves of garlic smashed and finely diced
6 Chicken tenders
1 tsp salt
1 tsp pepper
handful of parsley chopped
1 bay leaf
8 cups of water
