Mini Apple Pies

5 medium sized granny smith apples
6 tablespoons of brown sugar
4 tablespoons of butter
3 teaspoons cinnamon
1 1/2 teaspoons of nutmeg

To cheat you can buy two of the packages of the premade pie crust or make from scratch, I will post that recipe next.
Remember I used the mini pie cutters/molds from: http://www.pauladeenstore.com/Product/detail/Tovolo-2-pc-Petite-Pie-Mold-Set-Star-and-Heart/356872
If you do not have these than just taking a saucer, medium sized, and cutting around it will work.

Peel, core and dice up the apples. Mix them with the spices and sugar. If you have the mini pie molds then use them to cut the crust to the proper size. Lay one on either side and fill the side without the hole with some of the apples, be sure not to over fill or it wont press properly. You will have to repeat this process until you have used the apples. About 4 times. If using the saucers then cut out 8 circles, 2 for each pie. In the center of 4 of them evenly distribute the apples. If it seems like too much inside of them just cut some more and add apples to it as well. Place about 1 tablespoon of butter in each one. Take the remaining 4 cuts of crust and place on top of the one with the butter and apples. Press together with a fork and place on a cookie sheet to cook. With the molds you fill with the apples and 1 tablespoon of butter for each, press together and they come out perfect and ready to place on the cookie sheets. Bake at 350* or until the edges are browning and the apples look bubbly from the hole. Serve warm. Delicious and simple. I hope this recipe came out making sense, I am writing it with my husband asking me Christmas card questions, a dog into things, son screaming while eating and laughing about it, daughter refusing her nap. So if more questions need to be answered feel free to comment or email me.
