Quinoa Gluten free Chocolate Peanut Butter Muffins

1 cup Quinoa
1 cup sugar
1 cup brown sugar
1 1/2 cups gluten free flour
2 teaspoons cinnamon

2 teaspoons nutmeg
1 1/2 cups water
4 tablespoons butter
2 packages of chocolate chips
2 eggs
4 tablespoons peanut butter
1 teaspoon baking powder
1 teaspoon baking soda


Blend or food process the Quinoa until its powdery, not all of it will powder but a lot of it will. Heat 4 tablespoons butter melted in a medium pot, add the Quinoa, add the water, cinnamon, nutmeg. Stir constantly over medium high heat. It will start to come to the consistency of cream of wheat, add the brown sugar. In a large mixing bowl mix the sugar, flour, baking soda and baking powder. Add the cooked Quinoa mixture, add the chocolate chips, the heat of the Quinoa will melt the chips. Next add the peanut butter, by now it should have cooled down a bit. Beat the eggs and mix them into the Quinoa and flour mix. Fill muffin cups 2/3 of the way full. Makes approx. 24 medium muffins. I used muffin cups if you don't have any then butter and flour the muffin tin. You can also make mini loafs of this as well, fill to a little under half of a buttered and floured bread pan. It takes about 30-40 minutes to cook, my oven really sucks though so I have to continually change the times on my cooking, continue to check and it is done when a toothpick comes out clean. Bake at 350*
You can also add coconut, use almond flour instead of the original gluten free flour.
