2 can fire roasted diced tomatoes, you can use rotel tomatoes if you want more heat
6 cans bush's chili beans
1 large can red kidney beans
2 lbs lean ground beef
1 1/2 large red onion
5 cloves of garlic
1 small can of tomato paste
1 small cans of chicken stock
1 stick of butter
1 jalepeno
1 red and 1 orange bell pepper (if too spendy and not on sale, its not a must)
1 package of Carroll Shelbys chili seasoning mix
2 teaspoons of cumin
Toppings:
arugula
sour cream
cheddar
Smash and mince garlic. Peel and chop onion and peppers. Remember the seeds of jalepenos hold a lot of heat. Put beans in a large pot over medium heat, you want all of the sauce from chili beans, the kidney beans just use half of the juices. In a small skillet heat 1/4 of the stick of butter and place the onions, peppers and garlic in it, cook until onions are translucent (found this is the best way to sneak in the onions to people who don't like the texture). Add to the beans. Stir the beans constantly so they don't stick. Brown the beef (you can substitute for another ground meat). Halfway through the cooking process of the meat add half of the chili seasoning, put the other half in the bean pot. When done add to the bean pot along with the paste and cans of tomatoes. In the chili seasoning box there is masa flour and cayenne pepper and salt, now would be the time to add it, careful the cayenne is very hot, you don't have to use all of the seasonings either if you don't like it spicy Just add a small amount at a time and taste as you go.Put in the last of the butter and cumin. Simmer for 30 min and as it thickens use the chicken stock to thin a little at a time.
Serve hot. Delicious when topped with sour cream and sharp cheddar cheese. And like in my picture in a bowl with a tortilla, or tortilla chips. with the tortilla I have a small silver colander that I arranged it into and baked at 350 until light browning occurred and then I put it in each individual bowl.
It seems like it may be a lot to do but it really isn't its very fast paced and is done in under an hour the prep and cooking the onions doesn't take long at all. This is a recipe that is very easy to alter, u can use other meat any that you have left over, like cooked chicken breast, steaks, hamburger patties. You can also had a small amount of cream cheese to give it a creamy flavor.
