Ritz Chicken

6 Chicken tenders

2 of the rolls of stackers Ritz crackers
2 teaspoon of salt
2 teaspoons of pepper
2 teaspoons of paprika

1 egg
4 tablespoons of milk
1 teaspoon of salt



Olive oil or vegetable oil



Beat the egg, salt and milk in a small bowl. Crunch the crackers very finely in another bowl and add the paprika, pepper and salt.

Heat a medium sized pan. Always remember hot pan cold oil, it really helps. Pour a small layer into the bottom of the pan. Wait for the oil to raise to temp.

Dip the chicken tenders into the egg mixture. Hold the chicken piece and sprinkle the Ritz cracker mix on. I tried to just coat it in the bowl, and the crackers soak up too much of the moisture and it clumps too much to really coat the rest of the pieces well, much easier to just hold it and coat it on all sides.

Fry in the oil for about 5 minutes on either side over medium heat. Or until you see the pink of the chicken turning white a little more than halfway up the sides, then flip them and cook for another 6-8 min.
