Not So Meat Loaf Meatloaf


2 lbs lean ground beef
4 Ritz crackers smashed to powder
1/4 cup spicy BBQ sauce
1/4 cup plain/original BBQ sauce
1/4 cup ketchup
1 tablespoon teriyaki sauce
1 tablespoon soy sauce
1 tablespoon worcestershire sauce 
1 teaspoon salt
2 teaspoons pepper
2 teaspoons paprika
1 teaspoon chipolte chili powder
2 teaspoons all-purpose seasoning
2 garlic gloves smashed and finely diced
1/4 of a red onion diced finely

Spruced up Sloppy Joes

Decided on an easy meal for dinner, and I always have at least a couple of seasoning packets laying around for just such days. But, I find it extremely difficult to just keep with the instructions on the back, I just can't do it, maybe its the words telling me what to do I can't take or that I just want to make it into something more delicious. And I had a horrible experience with a can of sloppy joes, the seasoning packets are A LOT better, and you can change it up a little more in any way that you wish and not even use it for sloppy joes...? Yea, I have a recipe for a few others too. But this is what I came up with for tonight, and it was pretty killer. If you don't like pineapple then just try adding a tomato slice to the sandwich or a nice crispy piece of lettuce, bacon anything to give it a little oomph. Sloppy joes can be a little overwhelmingly "one" flavored, if you do that try using beef or chicken stock instead of the water. That gives it even more!

Marinara Quesadilla

--makes 4 quesadillas

1/2 cup favorite marinara, I usually make my own but I have my "emergency" stash of jars, I use Newmans Own, delicious and friendly
4 tortillas
large mozzarella "log" ball
nonstick spray


Heat large pan over medium heat, spray nonstick spray and place the tortilla inside add 4-6 slices of mozzarella cheese to one half of it and about 4-5 tablespoons of the marinara, or more if you would like. Fold over half of the tortilla and cook for about 2 min, flip and cook another 2 min, reduce heat if it starts to brown too much. Slice and eat up!
We made this as just a quick fix little meal, and it was killer. My daughter said "Daddy? You know Momma made dis, dis is awesdome" lol

Orange Cream Cheese Frosting

1-8oz pkg of cream cheese
juice of 3-4 oranges/tangerine ( I prefer organic oranges, they aren't as bitter or tangerines)
1/4-1/2 cup of powdered sugar, depends on how sweet you want
zest of the oranges/tangerines juiced

Let the cream cheese reach room temperature, I usually leave it sitting out while I make the cinnamon rolls so that its ready to go. Once to room temperature beat until smooth add in the orange juice and the powdered sugar, start with 1/4 cup, taste and add more if desired. Next zest the oranges/tangerines. Mix it in and dollop it on top of the cinnamon rolls. This is also really good to dip banana bread, zucchini bread into also delicious with the cinnamon wheat thins

Orange Cinnamon Rolls with Orange Cream Cheese Frosting

DOUGH
1 1/2 cups hot but not boiling milk
2 eggs

1/2 cup melted butter
1 teaspoon of salt
1/2 cup white sugar
1/4 cup brown sugar
1/4 cup powdered sugar
2 1/2 teaspoons yeast
5 cups bread flour

Juice of 1 orange or tangerine
Vanilla pudding mix 4.6oz

DUSTING FLOUR
1 cup powdered sugar
2 cups bread flour

Pie Crust

1/2 cup butter/margarine or butter flavored shortening
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup cold water/ sometimes a little less

Mini Apple Pies

5 medium sized granny smith apples
6 tablespoons of brown sugar
4 tablespoons of butter
3 teaspoons cinnamon
1 1/2 teaspoons of nutmeg


To cheat you can buy two of the packages of the premade pie crust or make from scratch, I will post that recipe next.

If you do not have these than just taking a saucer, medium sized, and cutting around it will work.

WHAT?!!

Don't have a heart attack, that is a man making cookies, my hubby trying to make an altered version of the Biscuit Chocolate Chip cookies, made them into sugar roll out cookies, I will share the variation a little later :)

This was kinda funny to help and watch, the questions that were asked while making cookies, lol.
But see my recipe are so easy even a Husband can attempt them!!

Chocolate Chip Biscuit Cookies (egg free)

These were an accident that I managed to do one morning at 3 am when my husband was leaving for a month and I wanted to send him off with a treat. I forgot the eggs and this is what happened. A sweet and deliciously chocolatey biscuit! I had rave reviews from it, and my husband "claims" these were no accident!

2 cups self-rising flour
1 cup sugar
2 sticks of butter
2 teaspoons of olive oil (if you are using margarine don't add the oil, it just adds more moisture when using butter, but margarine has enough oil in it)
2 teaspoons of vanilla
1/4 cup of milk
1 1/2 cups chocolate chips

My mixer was stashed away so I did this by hand, but by all means if you have a mixer USE IT! Cream the butter and sugar together (and the oil if using butter). Next add the vanilla. Slowly beat in the flour and add the milk slowly. It will be like a drop biscuit type of batter a little more wet than cookie dough but not by much. Then fold in the chocolate chips.
Nuts and M&Ms or what ever you want can be folded in as well.
bake at 375* for 10 minutes or until its a yellowish golden and just the tips of the peaks in the dough are browning. Pull out let rest for 5 min and cool on a rack. Try not to melt your oven like I did :) Adding cocoa powder is delicious too!

Tip:

Have one of those "coated" whisks? With the silicone coating? I just took a long look at mine and in the splits food can get caught in them! Check out yours and see. Careful with that, we don't want people to get sick from our food! I am going to be purchasing an all silicone one pretty soon, metal bends too easily and I don't think that I will ever buy a coated one again!

And January is going to be pie month! Savory pies, sugary pies, just pies pies pies! I was finally able to spend my gift card at Paula Deens store. Has only taken me since July to decide on something and I just purchased her silicone fold over pie presses, they have a little pocket to put the goodies in and one is a star and the other a heart. Should be rather interesting to see what type of pies this mind can come up with! Have any ideas? Carrot Cake

Perfect for Easter, well actually anytime of year if you love cream cheese and carrot cake! They are my favorite. Butter Creme frosting doesn't touch the Cream Cheese frosting. And there are so many ways that you can change the flavor. On a chocolate cake try adding a little mint to it...YUM!

4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt

Semi-Lemon Pepper Pork

You could also bread with with the seasonings, if doing it that way use about 2-3 teaspoons of each of the seasonings into about 1-1 1/2 cup flour. Put in a plastic bag shake to combine and then add the meat shake to coat and cook it as mentioned below

1 pkg pork scallopini (really thin cut pork with no bones)
paprika
lemon pepper
cilantro
parsley
all-purpose seasoning
1 tablespoon olive oil x 2 (need to add more when you add fresh meat)

Heat a large skillet over medium heat. Add in the olive oil. Next put the meat in and sprinkle a little of each seasoning over the top of it. Cook for about 5 min on one side flip and season the other side and cook another 3-5 min, or until the pink of the pork is a grayish white. I didn't add salt to mine I liked it as it was but you can add it if your taste buds desire it.
I served with just some veggies, but this is really good on brown rice with some corn.

Waffles

Recipe as old as the hills and is still around...because they are so delicious! (use Pamela's all purpose, or Pamela's baking and pancake mix if needed, its gluten free if the baking mix omit the baking powder)

2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/4 cup melted butter
1/4 cup olive oil

Left-Over Heaven

Do you have some left over ham or turkey or chicken? Lets layer it up with WAFFLES! Yes I said waffles. Now if you have frozen waffles use them, actually making your favorite and freezing them is ideal, but we don't always have the time. So store bought can work as well. I will post my recipe for waffles after this.

Take your waffles and meat and heat it up on and indoor/outdoor grill or in theoven on broil. Until heated through. If you are making fresh waffles they don't need to be put into the oven or on the grill. Just do the meat as the waffles are cooking.

Melt cheddar, american, provolone, monterrey jack, pepper jack any of those types of cheeses onto the meat. (I don't recommend parm, pecorino romano or asiago unless its on turkey or chicken). While the cheese is melting cook up some eggs to your liking.

Lastly layer it up. Waffle, little melted butter, cheesy meat and egg. Serve with a side of your favorite syrup. To dip and make sure you like it instead of coating it and spitting it out.

Ooo-So Bad Banana Split

So good to sit back and have one of these in the summertime. Or by the fire and pretend summer is still here. Be sure to look at the whole recipe....the bananas are a little cooked.

4 ripe bananas peeled and halved length wise ( I like them before too many spots)
4 cups of Frozen Vanilla Yogurt ( Who just went UGH frozen yogurt?...Seriously try --it its amazing it has much more flavoring and doesn't make your inches run so fast
4 tablespoons of PB2 peanut butter( Its actually powdered peanuts, you can add -----water or oil too, just use it as powder it is great in baking, etc..)
4 tablespoons of crushed toffee (or butterscotch candies)
4 tablespoons of chocolate sauce or caramel sauce
4 tablespoons of crushed pretzels (still decent chunks, not powdered up, gives that --salty sweet flavor)

Cre'pes Tangerine Suzette

These are soooo good! Not that good for you, but I am working on a healthier version.

1 1/4 cups whole milk
3 eggs
4 tablespoons melted butter
1/2 cup flour
1/2 teaspoon of salt
1 stick o butter (I can't push this enough...REAL butter makes a HUGE difference)
1/3 cup sugar
