Not So Meat Loaf Meatloaf
2 lbs lean ground beef
4 Ritz crackers smashed to powder
1/4 cup spicy BBQ sauce
1/4 cup plain/original BBQ sauce
1/4 cup ketchup
1 tablespoon teriyaki sauce
1 tablespoon soy sauce
1 tablespoon worcestershire sauce
1 teaspoon salt
2 teaspoons pepper
2 teaspoons paprika
1 teaspoon chipolte chili powder
2 teaspoons all-purpose seasoning
2 garlic gloves smashed and finely diced
1/4 of a red onion diced finely
Mix all of the ingredients together except for the lean ground beef. In a large bowl mix 1/4 cup of the sauce mix with the ground beef. Press into a baking dish or make into a "loaf" whichever you prefer. Take the rest of the sauce mixture and pour and spread over the meatloaf.
Bake @ 400 for 1hr or until the juices run clear and is browned all the way through.Really good with just a little bit extra ketchup on the top of each slice.
Best when served with Corn.
Corn for Meatloaf.
3 cups frozen corn
1/2 cup milk
1 teaspoon salt
2 teaspoons pepper
2 tablespoons of butter
Combine all ingredients into a medium sized pot and cook until the corn is no longer frozen and the milk is starting to "foam" to the top of the pot. Remove from heat and serve with meatloaf.
