Waffles

Recipe as old as the hills and is still around...because they are so delicious! (use Pamela's all purpose, or Pamela's baking and pancake mix if needed, its gluten free if the baking mix omit the baking powder)

2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/4 cup melted butter
1/4 cup olive oil

1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Preheat the waffle iron while you beat the eggs until fluffy add in the wet ingredients one at a time. Then slowly add in the dry ingredients. Beat until smooth. By this time the waffle maker should be preheated spray with nonstick cooking spray, or just brush on some butter. Pour just enough of the batter to get into the grooves. Cover and cook until golden brown. Eat them as is or use the left over recipe below...
