Turkey Bacon Wrapped Chicken Tenderloins with Gravy and Red Smashed Potatoes


--I kept this pretty plain and simple and it came out wonderful...fed a family of 4 with some leftovers, I would say probably 3-4 adults worth of food. Just double if needed.

-Turkey Bacon wrapped Chicken Tenders
1 pkg Turkey Bacon
8 Chicken Tenders
1 cup water

Need a Broiling pan or put a rack in the bottom of a roasting pan. Put the water in the bottom of the broiling pan or roasting pan, this is going to be for your gravy. Wrap the Turkey Bacon around each Chicken Tender, about 2 pieces of bacon per tender. Place on the top of the broiling pan and bake at 375* for 40 min. Should be 2-4 pieces of bacon left over in the pkg of bacon.

Turkey and Chicken Gravy
2 tablespoons of butter
2 tablespoons of flour
the water and drippings from the bottom of the pan
last 2-4 pieces of bacon

In a medium sized skillet cook the remaining bacon. When its done hand it over to the hubby to get them off you shoulders beggin for food. Melt the butter in the bottom of the same pan and add the flour, use a whisk to create a roux, and make sure to get the little bits of stuck bacon bits off the bottom of the skillet. Take the juices and water from the bottom of the broiling pan and whisk into the roux over medium heat. Continue to whisk until it thickens.

Red Smashed Potatoes
6 medium red potatoes diced, don't peel, just cut off the "bad" spots
enough water to cover potatoes
pinch of salt
4 tablespoons of sour cream
1 tablespoon of mayo
3 tablespoons of butter

Cover the potatoes with water and boil until a fork goes freely through it. Strain and return to pan. Add in the remaining ingredients and just smashed it around until well blended.

Serve it all together. Corn or green beans are an excellent side to this meal.
