Mashed Potato Crust Quiche

This was just something that I thought up the other day while putting away the potatoes, sounded to brunchy delicious! And I tell you what, the whole Quiche is GONE! Enjoy it as much as we did!



Crust:

7 medium red potatoes cut into 1inch pieces
3 tablespoons of butter
2 teaspoons of salt
2 teaspoons of pepper
non-stick cooking spray
Kraft Italian cheese blend
1/2 cup of milk
3 tablespoons of sour cream

1 tablespoons of mayo

Boil the potatoes until cooked through. Strain, return to pot and smash them. Add the butter first and mix well, next add all of the above ingredients, except the non-stick spray. Spray a pie dish with nonstick spray. Press the mashed potatoes into the pie dish. Bake at 400* for 30 minutes or until the edges just start to brown.

Quiche

8 eggs
1/2 pkg of cooked bacon, chopped into bite size pieces
1 red bell pepper, chopped into small pieces
1 orange bell pepper, chopped into small pieces
1 yellow bell pepper, chopped into small pieces
1/2 any type of onion, chopped into small pieces
2 garlic cloves, smashed and minced
1 teaspoon of salt
2 teaspoons of pepper
1 cup of milk
1/2 sharp cheddar cheese

Beat the eggs and milk together, then combine all other ingredients. Whisk together well. Pour into the cooked potato mashed potato crust. Put foil over the top to make sure it doesn't burn. Cook at 350* for 45 minutes, remove foil and cook until well browned on top and the middle doesn't "jiggle". Let rest for 10 minutes before slicing. Eat up FOODIES!
