Buttermilk Pancakes

Scratch buttermilk pancakes:
1 1/2 cups self-rising flour
1 teaspoon of vanilla
1 egg
1 teaspoon salt
1 tablespoon sugar

1 cup buttermilk, the recipe can use plain milk if no buttermilk/sour milk is available
1/4 cup milk
4 tablespoons of butter

In a large bowl sift the dry ingredients. If you don't have a sifter, use a whisk to break up the clumps. Make a well in the in the middle of the flour mix. Pour the remaining ingredients into the well and whisk until the egg is beaten, slowly going up the side incorporating the flour. Mix until smooth.
To really have a change in plain pancakes, try adding nutmeg, cinnamon or pumpkin spice.  Great to top with Homemade Whipped Cream and Homemade Simple Syrup
