Teriyaki Pork

1 package scallopini pork, as thin as possible pork that you can get
1/4 cup brown sugar
1 cup teriyaki sauce
1/2 cup soy sauce
1 tablespoon salt
1/2 cup water

Teriyaki Steak

1 package of thinly sliced steak, you can use any steak I just prefer thin it cooks faster and seems to hold the flavor more
1 cup teriyaki sauce
1/2 cup soy sauce or shoyu sauce
2 tablespoons brown sugar
1 teaspoon salt

Teriyaki Hamburger and Turkey Burgers

1 lb lean ground beef
1 tsp salt
1 tsp pepper
3 garlic cloves
1/2 tsp ginger powder or finely grated fresh ginger
3 tablespoons teriyaki sauce

Coming soon! All about Teriyaki!

I am going to start to do some "theme" cooking days. A different type of food by a certain ingredient, for children, desserts, main courses and how to compile a meal together.

Simple chicken salad

There are several ways to make a chicken salad. Many different things that you can add to test out to find how you like it.

1 apple
1orange bell pepper

Best scrambled eggs

4 eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon pepper
1/4 cup milk
1/2 cup sharp cheddar cheese

Whisk all ingredients together in a medium sized bowl. Heat a frying pan over medium heat and spray with cooking spray or use 1 teaspoon butter and 1 teaspoon of olive oil. Pour the eggs into the pan, and keep moving the eggs back and forth until its cooked through, when its not overly wet or "shiny" looking. Serve up and sprinkle with the cheddar cheese.

Making sour milk, in place of buttermilk

1 cup whole or 2% milk
1 teaspoon of vinegar or lemon juice

Mix them together and let sit at room temperature for 10-15 minutes. It will start to curdle just a little bit. This is not the same as milk that has been left out to rot. Buttermilk or sour milk is used in many cookies, breads and pies and creates a much different flavor in the outcome.

Skillet breakfast

5 large red or yukon gold potatoes
1 "tube" of sausage, can use diced bacon
1 green bell pepper
1 yellow bell pepper
1 red bell pepper
1 orange bell pepper
5 eggs
4 cloves of garlic
1/2-1 large red onion
2 cups sharp cheddar cheese, shredded
salt to taste

French Toast


  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1 pinch salt
  • 3 eggs
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon white sugar
  • 12 thick slices bread, french bread works great as well as texas toast, normal bread works too

Homemade simple syrup

Equal parts water and sugar, stir put on the stove at medium high heat and bring to a boil, stir to make sure that sugar crystals are fully dissolved.
You can flavor it with vanilla, maple and orange extracts. Nutmeg, cinnamon and ginger works well too. To make it fruity add in your favorite fruit. For citrus juice one and measure add water add an equal part of sugar.  Give it some extra flavor with a tablespoon or so of butter.

Buttermilk Pancakes

Scratch buttermilk pancakes:
1 1/2 cups self-rising flour
1 teaspoon of vanilla
1 egg
1 teaspoon salt
1 tablespoon sugar

Scratch buttermilk pancakes:
1 1/2 cups self-rising flour
1 teaspoon of vanilla
1 egg
1 teaspoon salt
1 tablespoon sugar
1 cup buttermilk, the recipe can use plain milk if no buttermilk/sour milk is available
1/4 cup milk
4 tablespoons of butter

*For the middle of the blanket you need an egg for each serving you are going to serve. This recipe yields about 8, but if you don't need to serve that many people you can make plain pancakes for lunch sandwiches with the left over!

Triple berry shortcake

Berry Sauce

1 cup blackberries
1 cup strawberries
1 cup blueberries
(now you can use any fruit that you want to in this, all one berry or multiple fruits)
1 cup sugar
1/2 cup water
1 tablespoon flour, cornstarch can be used
2 tablespoons butter

Cut the strawberries in half.
In a large bowl coat the berries in the sugar and let rest while making the biscuit dough. Don't touch them until the biscuits are in the oven or a little longer if you can, sometimes time wont allow but give it at least 20-45 minutes of sitting in the sugar. The sugar will help release the juices in the berries. You can also use frozen berries in this.

Homemade whipped cream

Warning: Once you make homemade whipped cream you won't want to buy store bought again!

1/2 pint heavy whipping cream
1 teaspoon pure vanilla extract
1/4 -1/2 cup powdered sugar, depending on the sweetness you desire

Chill mixing bowl and utensils in the fridge about 30 min before using, helps keep the whipping cream cool while beating. Pour the heavy whipping cream in the mixing bowl and beat until smooth, before stiff peaks form. Add the vanilla and slowly incorporate the powdered sugar until peaks form. Don't over beat or you will get butter.
Now if you over beat before adding the powdered sugar and you have peaks, it's ok, just fold the powdered sugar and vanilla in slowly and gently

Serve on pancakes, shortcake, coffee, french toast, pumpkin pie and anything you think might taste good with whipped cream!

Hard-up recipes continued from "Must have items for your kitchen"

Now when I started posting about this I had mentioned that you needed these items at all times in your kitchen:


BUTTER
flour, now I prefer self-rising especially when down and out
eggs
sugar
milk
basic spices, salt, pepper, garlic and onion powder, cinnamon
mayo
baking soda
BUTTER, wait I already said that....much needed!
oil, i prefer olive oil for most things
random spice packets, taco, stew, ranch anything

Now in addition to this would be items that you try to have in your kitchen, things like potatoes. I like to always keep steamer vegetables in my freezer, the store brand and some that have noodles or rice in them. They can be found for about a dollar or a little over.

I will be adding photos to each of the recipes. Some of them I do not have high res. on them so they don't look pretty, but as soon as I make the recipe again I will add to it. That way you can see how mine turned out. I know I always like to see a photo with recipes to compare and want to offer the same for those who view mine. Later on I will also be posting my "tips" that I give in recipes as well to show how, descriptions can only take you so far sometimes. If anyone would like a tip they are more than welcome to post a comment asking me and if I can help and answer I will.

Taco Bowls







6 tortillas, or if you can find the tortilla bowls you can use that too, I like to make them myself
1 lb hamburger
1 packet taco bell seasoning, I like taco bell, use whichever you like
1 large can refried beans
4 tablespoons of butter
2 garlic cloves, chopped fine
1/2 large red onion, chopped fine
2 cups of sticky rice, sushi rice
2 handful of cilantro

Honey Butter

2 sticks of butter
2-3 tablespoons of honey, depending how sweet you want

Let the butter reach room temp. Place the butter in a bowl and add the honey. I like to take a fork and work the honey into the butter, sometimes honey doesn't like to cooperate the way you want and mix perfectly, so smashing with a fork really works it in, then after you can use a mixer to make it really smooth and almost whipped tasting.
This is excellent on yeasted sweet rolls, english muffins, toast, french toast, pancakes and anything else you may want to sweeten up.

Garlic Butter

1 lb of butter, the whole box of 4 sticks, or if you can find it as a brick
4-9 cloves of garlic, depends on how much you love garlic.
1 teaspoon of coarse salt or sea salt
plastic wrap

Chicken Noodle Soup

3 celery sticks
4 large carrots
4 cloves of garlic
1 large red onion
handful of fresh parsley
5 basil leaves
3 sprig of oregano, use the leaves
salt to taste
pepper to taste
1 teaspoon seasoning salt
bag of tri-colored noodles (I like to use the veggie ones)
3 large chicken breasts
1 tablespoon olive oil
1 can of chicken stock
2 tablespoons of butter

Chop all the vegetables into bite size pieces. Finely chop the basil, oregano and parsley. Put into a large pot with the chicken breasts whole, doesn't matter if they are frozen or not, add 2 teaspoons of salt and pepper and the seasoning salt.

Thank you to those that have began looking at my site, and now I am looking forward to feedback. I should have a couple of new recipes up later tonight.

New

New things going on around here. Have a lot to do with testing some recipes, deciding which recipes to post. Then you add the everyday things with having two children, a puppy and a husband. Craziness. Any feedback that you want to give is greatly appreciated. The better and more convenient I can try to make this the better. Don't forget that there is music to the right to listen to while reading and using one of my recipes!

Chili made easy


Roasted All-in-one meal


Serves 4
4 large red potatoes
3 large yukon gold potatoes
1 acorn squash
1 granny smith apple
1 red onion
4 garlic cloves (it is garlicky, less or more is up to you, I do not recommend minced bottled garlic for this)
4-5 tablespoons extra virgin olive oil
1/2 a packet of buttermilk ranch
1 teaspoon salt
2 teaspoons pepper
4 tablespoons melted butter (more the merrier)
1 cup shredded cheese (any )
2 cups cooked chicken breast

Wash and cut vegetables into bite size pieces. With the acorn squash cut in half with a very sharp knife, watch out they move around! After cutting in half cut off the ends to have a flat base and top, then go down the sides with your knife and peel it. Smash the garlic cloves with the side of your knife, releases the juices, take off the peel and chop finely. Once all it cut combine all ingredients, except for the cheese, in a large bowl and toss until well coated. Put into a roasting pan and cook at 400* for 30 minutes, time may vary depending on your stove, the one we have is a turd and needs the higher heat. If yours is well then 350 for 40 min. Or until a knife goes smoothly through the potatoes Be sure to watch it and if it is starting to brown up quickly then "fold" it lightly . Then top with the cheese and put bake in the oven until melted.

Can be served hot or cold with ketchup, plain, sour cream. Or even turned into a potato salad by adding mayo, mustard and tossing gently. You can also add more vegetables, anything that is in season and readily available.

"Special" mayo

1 cup of mayo
juice of half of a lemon, or a whole one if it doesnt give you a lot of juice
fresh chopped basil, oregano
onion powder
garlic powder
you can also substitute the above three for all purpose seasoning, about 1 tablespoon and 1 teaspoon, if you dont have any fresh basil, oregano, but you have dry spices it will work too

Mix all together and use on burgers, sandwiches and potato salad just double it up.

Cheesecake Fruit Salad



6 bananas
2 oranges
2 apples
2-3 cups worth of grapes ( i like them sliced in half)
1 fresh pineapple (or the pre-chopped from the produce section)
2 cups strawberries, cut into bite size pieces
1 cup blueberries
and any other fruit that you want, and more quantities of which ever fruit you enjoy the most.
1/2 pint of heavy whipping cream
1 12oz can of philadelphia whipped cream cheese
1/2 cup powdered sugar
1 tablespoon pure vanilla extract
Cut all fruit into bite size pieces and peel the oranges by knife, by cutting the ends off so it has a flat surface. take the knife down the edges and peel closely. cut out the wedges.
Now for the homemade whipped cream. If you have a silver bowl chilling it and your utencils helps alot. Pour heavy whipping cream into your chilled bowl and beat until creamy, you dont want to turn it into whipped cream just yet.

When you are hard up you can make alot of ingredients out of these things with the scraps left over in your kitchen. Had to when we moved. had a 70$ budget to last 2 weeks! its amazing the things that you can come up with when you have nothing! I will share some of those hard up recipes later, its 230 am must sleep!

Very first post

I have gotten some exciting news that has prompted me to create a blog!!!! I may be featured in CookingClub magazine! I really hope that it all turns out! I will be using this blog for putting up pictures of my food and my recipes! it will also be a place where you can ask for some tips about food!!
